Happen to be the benefit provider for a local grocery store and saw a nice butt....in the cooler. Had them slice into 1 1/2 " steaks. Uses a little olive oil as a binder then a generous dose ok Kosmos SPG then a light sprinkle of savory pecan. Put them on at 3 today.

It's one of my favs too. Not so much the wifey. Cooking hers to 140 or so then reverse sear.

Yum, pork steaks are killer.
I cook them over direct heat/ coals scream'in hot and fast then put them in the oven @ 250*until they are tender which normally takes 45 min to an hour. Then I brush them with homemade apricot jam while they are resting. YUM!!! I need to get some sliced up...thanks for the idea.

140F pork shoulder? I would think that would be extremely tough. Let's us know how that worked out.

Yeah that was wrong. Went to 190 on hers too but did a lot of trimming to make momma happy. She's not a pork fan .....

Thanks MJB. I wanted to use a mop but the family said no. Do it just like you did last time. And I'm not doing a very good job of keeping up in my smokers log book LOL. But I do wish I had done one as a test
