Pork Steaks - Recipe Ideas?

Grabbed some nice looking ones at the commissary...

Saw a recipe for "Thai style", using fish sauce that sounded interesting.

Any other suggestions?

Plan on grilling them after work tomorrow.

We love pork steaks. Usually seasoned with salt, pepper & garlic. Grilled and basted with Italian dressing. Issue is thickness. Ours are normally 1.25-1.50" which allows them time to render better. At 1/2-3/4 they will get done rather quickly on the grill so watch them carefully.

Big jerk fan. Jerk pork steaks from last week. These eat a LOT like a beef steak. Key to good pork steaks is higher IT. Take to around 190F. Chewy and sorta nasty under that temp. chopsaw chopsaw taught me that.

Thanks for all the suggestions. Unfortunately, time and events got in the way,so I'll grill them the way I usually do, salt and black pepper.
