Grabbed some nice looking ones at the commissary...

Saw a recipe for "Thai style", using fish sauce that sounded interesting.

Any other suggestions?

Plan on grilling them after work tomorrow.

How thick are they?
 
Lately the wife has been into marinades. Italian had been a favorite. Also found an A-1 steak marinade that was great on pork.
 
IIRC, traditionally they are grilled and then slathered in BBQ sauce or put in a foil pan with BBQ sauce and braised.
 
We love pork steaks. Usually seasoned with salt, pepper & garlic. Grilled and basted with Italian dressing. Issue is thickness. Ours are normally 1.25-1.50" which allows them time to render better. At 1/2-3/4 they will get done rather quickly on the grill so watch them carefully.

Big jerk fan. Jerk pork steaks from last week. These eat a LOT like a beef steak. Key to good pork steaks is higher IT. Take to around 190F. Chewy and sorta nasty under that temp. @chopsaw taught me that.

I have a hard time moving on from plain old salt and pepper. I like the taste of the grill to shine through.
 
Thanks for all the suggestions. Unfortunately, time and events got in the way,so I'll grill them the way I usually do, salt and black pepper.
