Hope everyone is having a great weekend ! Vacation turned out to be a bust. Family was going to the beach and staying at our parents condo. Arrived at 930pm Wednesday night to find the A/C Unit died. 95 + degrees in the condo. Had a guy come at 12am and look at the machine and told us the compressor was shot and we decided to head back home (3 hour drive from the beach). Arrived back home at 430am Thursday morning. SO, in order to make me happy, I took my boy to the butcher shop and we picked out a rack of ribs to smoke on the smoker for the 4 of us....
Here is a pic of the ribs I taught him how to marinate.... And a picture of them fresh off the smoker.... and yes.... they were BETTER than they looked !!! and I think they look darn good..... just fell off the bone.
I use a simple Brinkmann with a fire box.. I don't do the 3-1-1 or anything like that... I put them on in the middle put a soup can filled with water on the opposite end of the box to give some water in the box, every 45 mts I spray them with apple cider vinegar and oil mixture and they were done in about 4 hrs... I tried to keep the temp around 225 but with the awful heat I managed to keep it around 230-250. It's also 98 degrees outside today so that doesn't help with the regulation of heat as much as you don't want it, you don't have a choice. I made up my own concoction for a BBQ sauce that I've used now for years and we enjoy it.... It's got a hint of whiskey in it and with about 40 mts left we mop both sides and then let them sit when done and use the same sauce on the side when eating them.... We enjoy a crispier bark.. Now on a Boston butt we've wrapped in foil and done the 3-2-1 or other method to speed up the cook and to avoid such a long stall.
