Decided on doing a couple butts this Saturday. Both came out very good.
The brussel sprouts were awesome again. This time I didn't use any bacon in it. Just some simple spices and olive oil.

Added in some pecan pcs the last 10 minutes prior to pulling out.

Just a simple plate. Red Tater salad, smoked brussel sprouts and some sliders.

Oh yeah. And some sweet corn off the Weber. Not a good picture of them. Sorry. No pictures of the 2nd butt when I pulled it out. Ended up putting in the cooler and took over to my dads house for him to enjoy.

You had me at Brussels sprouts but the sliders look amazing! Everything else too for that matter. Love it!

2 hrs in the smoker using apple pellets and then about 20 mintues in the oven at 475. Normally I would have used the bacon in it but decided not to do that this time. Tried to make it a little more healthy. They turned out good. Used onion / garlic powder and white pepper with some of the rub that I used on the pork butts.

Oh and the temp on my smoker was set at 225. The brussel sprouts are done when the get somewhat soft. They won't be mushy. The oven time can be increased to 45 minutes. Depends on how done you want them. The leaves that fall off of them while smoking become crispy when being finished off in the oven.
