So my first smoke is under way.. time to test out this beauty!

So I just did a simple rub with salt,pepper and some smoked paprika for colour.

Started this morning about 5am prepping and getting the smoker up to temp.

It's now running steady between 220-240
Have smoked it with hickory and Apple chips.

I’ve just hit the 6 hour mark and it finally got to 160IT so I decided to wrap.

So it took 12:20 but it’s done! Here it is resting.

Sorry for quality of photo! Will get a better one when I pull it.

Ended up unwrapping for the last hour as I wanted some hard bark.


Decided to get some chicken thighs on aswell near the end so managed to juggle yay

All looks good hopefully it tastes it.

The thighs are a great bonus.

Was just about to fire up the smoker and throw on a swordfish steak but it just started pouring here.From that last pic it looks sunny where you're at.Enjoy!
 
Congrats. Hows it taste?

I started out with with the same cut of meat. It's a good piece to start with. Cheap, forgiving and with the long day, you get to know your smoker fairly well.
