Pork Loin stuffed with blue cheese....Yummy!

It has been a while guys.  I have been busy with holidays and the family and I just relocated.  We are back in the Charlotte NC area.  

For New Years I did a pork loin stuffed with blue cheese and if you have not tried this and like blue cheese, let me say, it is awesome!

First season your loin how you like.  I used garlic, dill, rosemary, black pepper, and Lowry's season salt.  Then spit it down the middle I do  the fat side up so start there and do not go all the way through.  Stuff the dude with as much blue cheese as you can fit.

I used a mixture of Hickory and Mesquite at 200 degrees for about 3 and half hours.  I pulled it when it hit 150 internal and let it set for 45 minutes.

Here is the sliced pic.  The cheese just runs out and is awesome to dip the meat in.  I highly recommend trying this one.
