Pork Loin Roast with lemon herb quinoa and BBQ Vidalia Onions

did get many prep pics, but it was very basic. Pulled a pork loin roast out of the freezer the other day. Last night i trimmed the fat off and rubbed it with Lanes SPF 53 smoked to 138-140. put the thick onions slices on skewers, sprayed with oil and rubbed with BPS Sweet Money. Onions were on for two hours. near the end i
left a couple without sauce to compare - sauced was WAY better. Lemon herb quinoa was a nice lite side. Onions were the experimnet and they were killer! crisp sweet, smokey!
sauced the onions.
