Pork cook 11-1-2012

Hey guys,

New to the forum but not new to smoking.  Figured I'd share the first smoke of Nov 2012.  Started out with a mustard and misc seasoning which i spread over the meat then put in the fridge over night.  Take the meat out in the morning to get down to room temp and this is the before picture.



Then started the fire and got it set up to go.  Smoking with Apple wood logs in a char-boil smoker with offset firebox.

Here's the meat on the grill at 0700 hours.  Butts (7lbs each) will come off approximately ten to eleven hours from now and around four to four and half hours on the four racks of ribs. With a little apple cider vinegar sprayed on every hour.




 Will post more photos as the cook goes on.

Looks good........

Grew up just north of you in Merritt Island. Dad always was smoking mullet or anything else we cought in the river or ocean...
