Pork Butt - Smoker temp 175 - (my failure)

Here we are again. Another smoker temp issue.

10lb butt.
Was a sealed butt, Washed and slathered with mustard and used a Dry rub (Butt Rub)
Started the smoker @ 11 pm.
Smoker started out at 225.
Temp probe inserted about 15 min in.

Did not pay attention to the ambient temp. Opened up the vents a little and went to bed. Ambient temp hung at around 175 all night.

Woke up noticed the temp was not hot enough. Opened it up some more. AT is @ 240 and IT is currently @ 157 10 hrs in.

Internal temp did not cross 140 until about 8 hours in.

I’ve smoked many butts, but this was my screw up as I was extremely tired.

Only worry is botulism from the probe really.

thoughts? Toss it? Through it in the pressure cooker and cook the sh*% out of it and salvage it for other meals?

It should be fine. The 4 hour rule doesn't apply since it wasn't injected. Yours being an intact piece of meat only requires that the outer 1/4" reach 140 in that four hour mark and if the smoker is at 225 that is usually attained in the first hour usually even less that an hour
 
Our dearly departed food safety expert (RIP Jimmy) used to quote the 1/4" rule quite often but I don't remember exactly how the quote went but got the main point of it
