Hi,

The GF picked up a 20# "blade roast whole bone" pork roast.

Is this the butt and the picnic in one piece of meat?

I'm thinking you have 2 pork butts weighing 9-10lbs each cryovaced in one packageView attachment 515852
Look where I drew the line then look at your pic. Looks like 2 separate butts. It's common
Yup, that’s not at all what a pork shoulder whole, picnic and butt looks like primal. Those are two butts packaged together.

A Whole Shoulder aka front leg, would have Skin covering the Picnic portion and the cut narrows where the Hock was cut off. See below. I think 2 big Butts as well...JJ

Sweet, will be a bit easier to cook and serve! I will thaw just enough to separate and cook one now, one in a month.

Nothing at all wrong with that plan as long as you thaw safely in the fridge and refreeze the other butt immediately. Don't do something crazy like sit it on the counter to thaw lol

I let it thaw in fridge so the top 1/8 inch was soft. Split it and froze half. Live 'n learn. Will cook tomorrow.

Planning on 12 hours @ 250. Will get up @ 4, have it on by 5. Let it rest for at least an hour. No fancy plans on serving - just have a few people over. Plan a nap in there somewhere.

10:15, dropped temp a little, refilled pellets. Was running 250 on the dial, meat is at 114.

Turned out great, sliced it, did not pull it.
Big issue - wind kept blowing out the grill, so I finished it in the oven.
