My S.O. went to Costco yesterday to buy Christmas gifts, needless to say I'm a few pounds lighter in the wallet, needed to lose weight but not there....... But on to my question, she knew that I was wanting some pork belly to smoke on the grill and she found some only it was already sliced. Most of the slices are about 1/2-5/8 in thick and looks to be very nice mixture of fat and lean.
Any suggestions on how/if I can turn this into burnt ends......if not possible what can I make with this?

Yes, a lot of smokers are cubing them up and making burnt ends. Cube them up, rub, separate them on a Bradly rack or place them right on the grate and start smoking. Spritz if you want. As they near finish place them into a foil pan, lightly sauce, and then place back into the smoker. Add more rub/brown sugar if you want. I stir the pot a couple times so all pieces get tacky and pull when they are like butter.

Check your Costco for the rack of pork. Mine started carrying them last week. Its a pork loin (I believe) with a small baby-back rib attached. The ribs are french cut giving it the rack look. Remove visible silver skin, rub and smoke. Damn good piece of meat and fairly inexpensive.

I don't know why some markets slice bellies, it has to be removed from the cryovac packaging, then sliced and repackaged which all adds cost per pound. but the answer is YES, all you need to do is cube it, season it, smoke it for 5 or 6 hours, then put in a pan with a little butter and thinned sauce, re-season, cover and continue to cook them tender. And they will get melt-in-your mouth tender.

I hung these on skewers, but they cook just fine on a grate.

Malcom Reed @ How To BBQ Right has a great pork belly burnt end video. He uses WAY more butter and sauce than I like, but it's a good video.

Smoked and seared pork belly is what I did, very similar to what thirdeye has posted I cubed them after they were smoked used a rib rub to season them. People at work are still talking about it two years later.

That's pit temp dependent. If it gets some color before that, move to the wrapped step, that is the portion of the cook that tenderizes the cubes.
