Pork Belly Tacos W/ Appleslaw

For whatever reason, pork belly tacos popped in my head this morning. Went to the store after church and got all the goods... I'm gonna have to stop thinking about food during church 😂.

Put the belly on with some Honey Hog and kinders Cherry Chipotle rub.

The Mrs's whipped up the appleslaw. She shredded 2 honey crisp & 1 green apples, about a 1/3 cup Dukes mayo, about 1/3 cup honey mustard, about 2 tbs honey & black pepper to taste.

Built em up with the appleslaw, some candied jalapeños, pickled red onion, avocado salsa, Kinders hot honey glaze & topped with crumbled Cotija cheese...and of course plenty of belly.

These things were fantastic, we will be making these again.

That looks fantastic. How long did the belly take ? Smoker temp ? Meat temp ?
Thanks. I wasn't really paying attention to time as much, but probably about 4½ - 5 hours ish... I ran the smoker about 250º, and internal was probably around 195. After 190 I was mostly just checking for probe tender. I did forget to mention, I turned on the broiler in the oven to crisp the out side, only took about 45 seconds on each side and it had a nice crisp bark to it.

We bought another one, a cherry brown sugar. My wife said it was good but liked the hot honey better

Thanks John, thats a great idea on the strips. Haven't seen those around here.
Costco often sells sliced pork belly. Nice thing is they skin it so almost worth the price increase over a whole.

Back north sliced pork belly is called side pork. Sold in most local stores.

Thanks Chile. You're right there flavors were very complimentary. I usually dont make things with so many sweet ingredients, but this one was spot on.
