I'm looking to try my hand at stuffing.   Got everything ordered.    So many different kinds of links,  hard to know where to start.  :-)
 
i mix it with the cubes and chunks, let it sit a few minutes while it draws a little moisture from the meat (so I won't have to add any water) and grind it through the coarse plate twice.  On the second grind i will wet my fingertips in water to gently push it through into the throat; I don't 'stomp' it if it is not absolutely necessary.  Feed it consistently and don't back it up, let the grinder do it's job.

Pops,  Thank You  for sharing  the sage recipe.   I grew up on good sage sausage.   Made me feel like a kid in a candy  store.
