Pond & Barnyard (Country Surf & Turf)


I dug around in my Freezer, and found the Perfect makings for some Cheap “Surf & Turf” That I’ll call “Pond & Barnyard”.
I found a couple of Catfish Fillets, and I had some Pulled Pork & some leftover slices of Double Smoked Ham.

So I ended up with a couple of Outstanding Plates of Vittles for the Bear.
I started out the first night with a Nice Catfish Fillet in some Butter, in my Frying Pan.
All I added was a whole bunch of Old Bay Seasoning on both sides as I was flipping the Fillet.
I kept it going until it flaked easily, and my fork slid through easily at the thickest point (Well over 160°).
I spooned some hot melted Butter over the Catty after plating & some Tartar Sauce on the side.
Then I put a few layers of Double Smoked Ham on a roll with Yellow Mustard, and melted a slice of cheese on top.

Then for the second Night’s Supper, I did the same thing with another Catfish Fillet & Tartar Sauce.
However this time I added a Sammy of Pulled Pork to go with it.

Catfish has always been my favorite eating Fish, and Double Smoked Ham & Pulled Pork are right up there with the Best Bear Bait available.

Lol, The title made me have to come and look. Ham sammies are some of the best IMO, And that Catfish looks great!! I have had catfish twice, Loved it once the other time was cooked brutally. So next trip back south I will be trying again. Like for me...
 
Nice looking plate of bear treats. I would have been full on the catfish.

I think my Family was the only one above the Mason Dixon Line that knew how awesome Catfish was back in the '60s.
Used to eat about 4 Small (10" to 12"--Both sides) Catties at a sitting.
Now if you can find it in a Restaurant it's about $20-$30 for a Catfish "Meal" with a very small Fillet.

Looking good Bear! I love catfish and eat it often in the summer as I slay them on a nearby reservoir. It’s a deepl clean rock bottom reservoir so the fish is delicious. For a minute with country “surf” I thought you might be cooking crawdads. I’ve caught them in the creeks , boiled the tails and dip in butter.
