Pompano on charcoal bbq...
Cleaned, gutted, fins and tail pruned... gills out... liberally coated with mayo (it doesn't stick to grates)... "Vegeta spice in and out... sprinkled with origano and basil... Vision natural lumps charcoal... liberally sprayed with olive oil spritz (both fish and charcoal) for extra smoke flavour...
Fries and salad (tomato, red and green onion, parsley, olives and blue cheese crumbs, lemon spritz......Tuborg gold tall boy beer ..

Thanks man... I got tip from older fisherman dude.... use mayo and "paint fish with" before you slapped on bbq.... magic... fish doesn't stick on grates....lol

Looks excellent!
We had an abundance of pompano in Ft. Lauderdale when I lived there, but I didn’t realize they were a cold water fish as well. Good eating for sure!!
