Trying out the Sausage makers Polish salami kit. Made 5 pounds. Tomorrow I'll be finishing them. They smell good already! Straight forward mix. Stuffed by hand.

I usually do with larger casings. Less to clean up.
 
That came out pretty good for doing it by hand . I tried it once . For about 30 seconds . Then got the stuffer out .

That's some crazy color Steve. maybe it my screen but they look hot pepper red.
 
They do have a red tint. But, I think the flash on my camera caused that. I'll take another tonight with the money shot.
 
Sliced view. Meh, not bad. It's still just a summer sausage.
 
Steve I usually stay out of the sausage threads, but that is some good looking sausage right there.
