hello all,

i recently purchased a Brinkmann verticle smoker, even after soaking my wood chips for a substantial amount of time, they are burned up to ashes wihtin 30-45 min. i put them directly on the hot coals...is that the problem? Should i be using wood chunks? i would like to smoke this meat for a few hours! what am i doing wrong? any suggestions or mods ?? thanks in advance

I use wood chunks on charcoal in my WSM for the very reason you mention:  chips burn up too soon.  To use up the rest of your chips I recommend using them in a foil pouch with a few holes poked in the top.  Once you use them all I recommend using chunks (sparingly).
