I'm planning my first pork butt overnight smoke this Friday night in my masterbuilt. I'll be using my pellet maze as well as Auber to control temp- temps right now look like they will get down to right above freezing. Is there a cause for concern with such low temps?

The one thing that I can think of now is opening the chip tray to allow air into the smoker to keep pellets lit. For those that have done a similar smoke in the past, any tips?

I've had no issues with temps in that range. The wind is another story...a strong cold wind could be troublesome, this is when a welder's blanket comes in handy.Just wrap the smoker.

I've cooked in my MES several times at or below freezing temperatures with no issues. Its so well insulated you shouldn't have any problems.

For sure on the chip tray. Pull it about halfway out in the dump position and you should get plenty of air flow. No water in the pan obviously. Just make sure you get your pellets lit good so you don't wake up with no smoke on your meat. What are you cooking?

Take some pics and let us know how it turns out!

I frequently smoke in the winter, lowest temperature so far has been -25C. My biggest fear would be a fire during the night. I‘d use a remote food thermometer(TP-8) and set high temperature alarm just in case you have a fire or a runaway smoker.
