ON THE MENU IS A BRISKET FOR THE FIRST TIME I AM THINKING ABOUT RUBBING IT DOWN WITH FAMOUS DAVES BEEF RUB AND LETTING IT SIT OVERNIGHT IN THE FRIDGE WITH THAT. HAS ANYBODY EVER INJECTED A BRISKET BEFORE? IF SO WHAT DID YOU USE? I AM USING A OFFSET SMOKER AND PLAN ON USING HICKORY CHIPS MIXED WITH CHERRY.

I have injected a brisket before,  What I inject it with really depends on my mood, Sometimes I will just add a little rub I'm using into some water/ apple cider vinegar mix.  Or Sometimes I will inject the brisket with my homemade BBQ sauce that is already vinegar based so its runny like water and not a thick molasses based sauce.  I personally like to smoke my briskets with mesquite chips with a little cherry mix in, I have done briskets with hickory before and I think the more powerful flavor of mesquite smoke really goes well with a big hunk of meat like a brisket.  I hope this helps. and make sure you include a Q-View! We all want to see the finished product.

For an injection i use

½ gallon Beef Broth

1  8 oz jar Beef Base

2 Pkg Au Jus

1 Tbs Worcestershire Sauce

Bring to a boil then cool before injecting.

I have never injected a brisket before, and not had a problem with juice.  Maybe I need to try it next time.  Good idea, more smoking, more good eating!  Steve

I have injected (1 cup apple juice, 1 cup water, 1/4 cup rub) and it was good. My best results have come from smoking it without injecting. Just leave a little more fat on and monitor your temps.

Also, for a really good flavor "injection" I marinate the brisket in 100% Dr. Pepper for a night, then rub it and let it sit for another night. That gives a different taste but to me, the plain is the way to go.

Holy Smokes Rap'! What size Brisky takes a 1/2 Gallon of injection? Isn't that a lot of Salt between the Base and the Au Jus mix? Just curious, it sounds good...JJ

You can use it on more than one brisket.

I like to use 18-20lb Briskets, i should have mentioned that this is a comp recipe. I also inject in the same pan that i cook the brisket in and use the excess injection

as a basting mop during the cook. As the Brisket cooks it renders some juices and fat that dilute the injection/mop.

You end up with a very tender, flavorful piece of beef.

Ok, That makes sense! Beautiful Brisket...JJ
