Back in the smoker to warm up. Added some beef broth and red onion for sandwhiches. What temp should i go to?

Once my family gets together it's hard to get pictures. I'm slicing and serving food, thankfully usually I got someone handing me beers. I don't think I've ever gotten a proper "plated shot".

Not too drag this out too much but here goes. Party rescheduled for today. Still cant find a pork shoulder to save my life. Picked a whole loin instead. Covered with a cilantro lime seaoning. Going to put it on a bit later with plans to cube it for tacos later tonight. Should be interesting.
 
Wife changed the an slightly. Smoke until about 150-160 then transfer to a crock pot to make shredable.

Sounds like a good plan to me. A bit of smoke but then slow cooked for tenderness.
Sometimes you have to admit the ladies know how to cook ;-)

My exact respoce was "Thats a hell of a plan!". Roast was cut into two at 150ish degrees and into the crock until finished. Now my time to run errands... at the local brewery. 🤣
