Hey ther . I just got myself a Austin XL. Just wondering if someone can help me out. Should I use the hood thermometer gauge or should I use the actual temp on the controller. I have a grill thermometer in there too. All 3 are giving different temp .
 
I set the temp on the controller at what temp I want to cook at and most of the time if its not windy the hood gauge will be the same when its warmed up,smoking is always going to have a + and - range swings are normal and I don't sweat it. have fun and its a great smoker but don't get upset if you see swings of 25 both ways some times ,the lower temps will cause it to smoke more and lead to more smoke flavor,the higher temps burn cleaner and you have less smoke flavor. it all evens out in the end imo.
