Going to be doing a test run for our upcoming Tamale project. Have a 3 pound chuckie that will be going in tomorrow. Ernestina picked up a bag of Pinto Beans, she normally makes them in a crockpot. Some will get mashed up, have some Chile powder added with a bit of cheese. In a moment of haste I shot my mouth off....let's put them in a pan in the smoker, under the chuckie. Did a quick search and couldn't find any real help so...
Can someone bail me out of the hole I just put myself in? I can handle figuring out a spice package. But what should I use for a liquid? Chuckie is only 3 pounds, will not be foiled so based on the 2 hour/pound rule guesstimate I have seen mentioned Chuckie will be in there for 6 hours or so.
Anyhow, can someone help me please?
