Gonna make some pig shots tomorrow. Anyone that has made them or knows. Is it possible to prep them the night before and refrigerate till ready to go on smoker next day? Good idea bad idea? I want to fire smoker up in the morning cause it’s gonna be another hot one tomorrow and it will give me something to eat throughout the day. Along with more cheez itz with Webber KC bbq rub. Also doing the bacon wrapped ritz cracker jalapeño poppers. It would be one less item to prep in the morning is why I am asking. The ritz cracker poppers I wouldn’t think could be done night before cause I think the cracker would turn to mush.
 
Yes... they can be made before hand... What filling are you going to use... Cream cheese and such.. or brown suger and rub mixed ??
Thank I was hoping so. Cheese shredded cheese with a small amount of green chilies. I was just gonna try the Webber regular bbq rub I have on them and a slight sauce I also have at the end. Was my thoughts anyways. Always open to suggestions tho.

I've made the pig shots before. Pretty good stuff. Now these ritz cracker popper things sound interesting also.

I will find out tomorrow lol. They are good. Ritz cracker put some cream cheese on it. The slice of jalapeño on the cream cheese tak one slice of bacon cut in half. Wrap half one direction then other half in other direction. Seasoning on top if u like. I did use seasoning. I seen different temps to do at but I did mine with my last cook 250-275 ish till bacon is cooked to ur liking.

That seriously caught my eye. I just got done bacon wrapping some meatballs and mushrooms for later...

Also, I do a version of pig shot with cream cheese and crushed pineapple. It's not too shabby. In fact, you can cheat and buy the pineapple cream cheese already made.

They r good I certainly recommend them.

I’ve never sauced them, but not opposed. They reheat well in a 300deg oven btw if needed. I made some with and w/o jalapeños one time - Everyone said they were better with, even the non-hot people.

My mixture for things like this consist's of onion and chive cream cheese (the easy route) and shredded Pepperjack or Habanerojack. Heavy with the cheese... Then season with the rub your going to use...

Need to do this cause I have people that don’t like heat at all.
 
They are done. Well was done several hours ago. Turned out amazing not sure as far as pig shots I liked better sauces or not it kinda a toss up.
