Hey guys, I bought some brisket on sale today I bought a 10lb brisket to smoke for the family also bought a small cut of a brisket 2lbs to smoke tomorrow for just me and the wife. Do I just rub this down and out it on the smoker at 225 and cook till its soft and around 200 internal?
It's not a flat or a point just looks like a brisket sliced across almost into steaks.

Being so small, I'd be afriad of it drying out too quickly. I'd probably smoke it til 155ish and then into a pan with beef broth til tender... but wait til others chime in on it
