Picnic or boston

How much difference is there in using a picnic
It instead of a boston butt?

In the final product there is no difference.

The picnic will have a large fat cap that needs to be taken off IMHO, butts usually have it trimmed up during processing.

The butt has more intramuscular fat and cooks up a bit moister IMO....

Yup & a picnic has more connective tissue & usually has to be cooked a few degrees further. They also have a little stronger pork flavor...

I usually mix the two to get a little of both in the pulled pork I make.
