I posted a thread on this a year or so ago, but I think it may have been lost in the crash. My wife and I tried a couple of different methods... I used vinegar, pickling spices and beets for color... she used left over pickling juices from jalapenos, dill pickles, pepperoncini, and whatever other jars went empty. Honestly, her approach was the simplest and we actually liked them better. Neither batch were smoked.
Anyhow, I haven't done these in a while, but there was some discussion about them recently, which made me want to make some. I read about different methods of smoking eggs (cooking on the smoker, boiling first and then smoking, etc.). I chose to hard boil mine first and then cold smoke them on my ECB. Pickling juices were similar to the wife's method we tried before.
Here are the eggs on the ECB. Nevermind the crud on the foil below... just some left over ABT filling. Since I was just cold smoking with a couple coals and a stick of pecan, I didn't think it woud matter much.
After about 1 hour of cold smoke, I dumped them into the jar of various pickling juices. There is a left over pepperoncini and some jalapenos hanging around in there too. I normally add a couple of drops of green food coloring. The kids especially like this... even though they don't eat them, they give them a cool color... GREEN EGGS! Yukky!
Here is a sample after about 10 days. They will be better in the coming weeks, and should look kind of like a gobstopper with the different colors. This one looks like something Yoshi might have left behind on Mario World. The spots are from where the egg was touching the side of the jar, other eggs, etc. See, I told you they were fun, and they are good too. I honestly can't detect much of a smokey flavor. Perhaps a stronger wood next time. Time for a beer... Burp!
