Neighbor dropped off some fresh beets from his garden last night. Ended up with 16 pints and ALL the lids poped! I used the Blue Book recipe, cause thats what Mom made. I added a jar of cocktail onions 'cause I like 'em!

LOL.. I was just talking about this on the forum somewhere this weekend.

Now I can open another jar of last years pickled beets with supper. I gave the neighbor a jar from last year, he couldn't believe it. He'd never heard of pickled beets he baked his. He just kept saying, "but they are sweet!"
 
Pickled beets have been a staple around here for years....  Luv 'em....
