So I did cheesesteaks on the Kamado Joe soapstone. Ribeye, provolone, green bell peppers, onions, and mushrooms. I wish I had more provolone but everything turned out good.

That's a little heavy on the onions & peppers for an authentic "Philly Cheesesteak", but you wouldn't get any complaints from me!!!

Looks great. Jut the way I like them except I use American cheese.

Cheese Wiz = Tasteless Grease
Probably less than 2% of Steak Joints in the Philly Area use it.

Only problem is the meat is too good and never cheese, but wiz for the real deal. The key to real philly is cheap lousy meat, wiz, and onions.
But looks good nevertheless, not “authentic” but good.

I've been toying around with the idea of getting a BGE or a KJ mainly because I like the versatility of it being able to cook pizza, do the low and slow, and countless other things like what you just posted. I've got a family member that raves about them.

Found a BGE on craigslist the other day for $200 and almost bought it but it was only a size small!

For $200 I would’ve got it. They will last forever. I am a kamado guy myself and prefer the Kamado Joe brand over the egg because I believe they offer more bang for your buck.

That must be an Arizona Cheesesteak.
In My Philly area, the huge majority uses Decent Quality Meat, Real Cheese (usually Provolone), and whatever else, like Fried Onions, Peppers, Shrooms, etc.
And if you're drinking a lot of Beer you might have to take a Wiz.

I used choice rib eye in mine. Not sure what they use in philly. My only complaint with mine is I didn’t get enough provolone at the store.

Granted, according to Carolyn Wyman, food writer, Philadelphia food tour guide, and author ofThe Great Philly Cheesesteak Book, at least one of Pat's employees added Provolone to his personal steak sandwich and was sold by Pat's, Cheese Whiz was introduced by Geno's, adopted by Pat's. Whiz by far is the biggest seller, according to the Pat's employees I spoke to some years ago...JJ

Pat's & Geno's are two of the worst Cheesesteak places in Philly Area.
It's all Hype for Tourism. If you can BS the people enough to get them there to buy one Cheesesteak, that's a lot of $$$. Even $$$Millions$$$, "but only from one time customers". Because they don't come back for another one.
Kinda like making & selling a worthless gadget. If you can advertise it good enough to sell Millions of people only 1 of them, you can make Millions before everybody finds out it's total Junk.
I was at both of them once---Never again, Neither have those who I was with, or anybody I personally know.
I don't know what other people dislike about them, but one of my reasons was the Tasteless Grease it was swimming in.

Philly natives will tell those two places are the biggest jokes in Philly. Tourists don't know the difference, because they don't know that there are hundreds of Cheesesteak places within 60 miles of Philly that make much better Cheesesteaks than either of the two Phonies. Most Steak shops, Bars, and even some Restaurants make better Cheesesteaks, and very few of them use wiz.
