I understand your dilemma. I live in Chicago which has a handful of small independent Peruvian focused markets, but the fresh peppers themselves are next to impossible to find. Personally, I do what most Peruvians do and buy the aji panco and aji amarillo in a paste form, which is readily available on Amazon. I don't know if Amazon Canada carries it but you may want to check it out. The brand I favor is known as "Inca's Food".
Thank you for the kind words. I would give a dollar or two to have access to those kind of ingredients. I love living in the Rockies but the grocery selection is limited.

I am sure it would work for a large cut but the high oil content is designed for higher temperatures as opposed to a long and slow cook. However, the flavouring profile would go great with any beef. My suggestion, give it a try and post it!
Love the recipe. I will definitely try it on some kebabs. Any idea how it would work for some large steaks or even a big chunk of beef rib? Maybe have to marinate overnight to really grab all that flavor. Q view always appreciated!!!
