Peri-Peri Chicken Thighs

I was wanting to do some Asian Boneless Chicken Thighs and was looking through my stuff to see what I had. Found this bottle of Peri that Jed had mention a few years ago. Decided to go with that.

While thighs where thawing was thinking about our friend John, BearCarver. In his honor I used my Ninja to grill. Put Peri on chicken and vacuum sealed in the morning. When I tasted sauce it was very spicy. While I like pretty spicy this stuff was fire. Decide not to baste with sauce while cooking.

Made up some of my squash dish and a salad.

Most the heat went away during the cooking but really love the flavor. Next time I will baste with the sauce.

I get my wine at Trader Joe's. It is amazing how you can get really good wine for less than $7. This went good with the meal.

That chicken looks tasty Brian ! Love that Ninja for indoor grilling .
Thanks Rich. First time grilling on it in a long time. Brings back memories of John when I do. They have lobster tails on sale for $4. I going to try a couple from a chef I just seen do them in the Ninja. Other two will sous vide.

Peri Peri chicken is out of this world when you get get a proper sauce or go to a place that makes it correctly. I found 99% of peri peri sauce recipes online are flat out wrong.
If you ever get down into the Addison area there is a Nando's Peri Peri chicken there and I highly suggest if you ever get to go there that you get the half chicken and prepare to be amazed!

Oh also their brussle sproutes, cauliflower, and their grilled corn are amazing as well. Hell everything there I've ever eaten is great and the quality is fantastic!

Nandos is great! Their sauce is pretty widely available too.

Dry rub of your choice . I use Franks red hot or a Nashville hot chicken I have .
About how long do wings take? I may throw some wing flats in today for app before my seafood feast.

I'll guess around 30 minutes . I just flip them over a few times . Don't over fill the plate . If I have a full tray of wings I do 2 batches . I do all drums , then all flats so they cook in the same time .

I finally got this done. Man where these good! I usually put 10 in a package but guess 6 all I had left so I threw a piece of sausage in. Used my purple basil for the first time. Had made Eric's Curtido Repollo but forgot to take it out. That salad gets better the longer it sits anyway.

I just love this jerk on wings but they quit making it years ago. I had found 3 bottles on amazon few years ago and this the end of it. They have a new one but not the same. Looked at label and there is no sugar in it like the other. I added some sugar and did a taste taste before I emptied the bottle. I think I got close. I use this after the wings get done. There was a place by my brothers in Fl that had these years ago and I went on a quest to find out what seasoning they used and it was this one. Broke my heart when they quit selling it.
