PBBEs - Kettle Style

I promise you. This is the last time I will post a thread for a while. Well, at least till the next time, but these little babies were so good - even the wife approved.

To get started I had a small pork belly sitting in the freezer for a while. I was planning on makin-some-bacon with. That never happened. So I thought to myself. What haven't I had in a while, and then the light bulb went off - Burnt Ends.

No beer pole on this one. I started out by cubing up the belly and giving it the old shake-n-bake treatment with Kinders wood fired garlic rub.

The 22 was called into action. Using BB oak briquettes and some apple chunks in the charcoal basket.

When they temped at 175* I placed them in a disposable aluminum pan with about 5 tablespoons of butter and a jar of KC masterpiece BBQ sauce(original). They sat covered for about an hour and a half. Then they were pulled and set back on the grate to set the sauce.

45 min. to an hour later they were done.

Knowing my wife's taste. I really didn't expect her to like these, but WOW. I brought one in her office to try and she immediately went out to the kitchen and grabbed three more. Total shock.

Anyways as always - thanks for taking a peek, and I promise I won't bog the site down with anymore threads for a while.

oh man those look great, I need to do them again. Never did them on the kettle though.
 
Nope not good enough Chris. If you are cooking on one of those kettles I want pictures, just saying. Love your kettle cooks they are all worthy. Btw, those burnt ends look fantastic and I would steal as many as I could get away with. Keep smoking and posting my friend,

LOL Appreciate the humor Eric, but I've flooded the site this week with posts. Time for a break, besides it's raining here again. Hopefully it doesn't rain hard enough to reflood some of the towns again. Most haven't recovered from our mid-week flooding.

Thanks Keith, They all made it inside. Way to hot outside to eat them. However how many disappeared once inside is another story.
