I started about 20 lbs. of beef brining for pastrami Wednesday. I used a mix of swerve, sucralose and 2 tbsp molasses for the sweet portion of the 2 gallons of brine. Will be pretty much almost nonexistent carbs in end product.(wife and I both maitain keto diets) Not being overly patient I threw in 4 very thin boneless sirloin too. Pulled them out today, rinsed and dusted with coriander, mustard and coarse pepper. Grilled them up and sliced thin. Pretty damn good. Really looking forward to smoking my big chunks in a couple of weeks.

Looks good to me. LOL Planktown labels... Can't do full keto but watch carbs/like beer so we do some intermittent fasting. That said, we prefer less sugar than most recipes here anyway.

Sooo close yesterday. We were at Fatheads watching.

You were at Fatheads in Republic? Relative to Planktown I buy most of my spices and cheeses there. Get some meats around the corner at Newswangers.
