Pastrami and Beef Party Ribs

Ever since @Steve H posted about this sorcery that magically turns corned beef into pastrami I just had to give it a try. There were more beef ribs to smoke so I decided to do both.

The ribs were done in about 4 hours but the little corned beef well, lets just agree with @fxsales1959 that the smallest one can take forever. I didn't even start until 3pm. 12 hours and a few beers later the pastrami was finally done. It is basically the same as smoking a brisket but I didn't think about it ahead of time.

If you own a pressure cooker or pressure canner you can smoke the corned beef for 3 or 4 hours until it gets some good color, then finish it in the pressure cooker. Times will vary with the pressure you choose, and the thickness of the meat. I usually go 40 minutes at 13# with natural release, and if it's not tender enough I[ll go another 5 minutes.

It would definitely save on wood. This large smoker sure uses a lot of it.
 
oh man...between this thread and @Steve H I am jonesing...gotta hit up the kroger and see if they have some corned beef. Havent made pastrami is WAY too long.

I made some more a week or so ago with a different brand of CB. Wasn't impressed at all. I'll stick Grobbels brand.

I think my only option is Kroger brand up here...I'll find out this week.
