Smoked up some quarters on Sunday and did not have the usual apple juice sprtiz, So I used a few tablespoons of pancake syrup diluted in water and man oh man did it come out good!!! Will only use pancake syrup from now on.
I've used honey & Jack Daniels before. Never thought about 100% maple syrup with water to thin it some. Sounds like a great idea for pork as those flavors go together well.
I would not dilute the maple syrup with water as it has a mild flavor to begin with. Rather than trying to spray it on the meat just lay it on with a silicone pastry brush, it will be easier and have more flavor.
