I know this is not a smoking issue but for years I have went to parties where this guy comes and cooks paella right in front of you. Ever since the first time I have always wanted one. I cook a lot of BBQ for my clubs and all but wanted to branch out. Lucky me today Is my b-day and my wife found a killer of a deal on craigslist. We went and picked it up. It was an almost new unit came with a 26 inch pan. My wife also bought me a 22 inch pan with a lid for it. So now not only will I be smoking but also doing paella. Anyone have any good recipes send them my way.
 
The original recipe for paella comes from a small town in spain located on a small lake where the first paella ingredients where frog legs and snails. Feeling historic?
 
Yeah I read all that would not mind using frog legs but I would be the only one eating it LOL
 
Check some of steven rachlins books. He does a paella on the grill using the large pans. It sure looked good.
When I worked at Olives in D.C. we would finish the paella in a wood burning oven. Excellent!
