Oxtail Soup - smoke roasted over open fire

Oxtail cooked over red oak at low heat for 1.5 hours.
Then braised with vegetables in Dutch oven over low heat coals for 2.5 hours.
Meat shredded from bones, and then bones cooked another 4 hours in same broth.
The broth is rich in collagen and very gelatinous. The meat is reminiscent of short ribs.
Excellent soup. Yea, oxtail does look a little funky.

Nice thread! Love oxtail… such a rich beefy flavor! Good in soups for sure, then add the open fire and Dutch Oven… just awesome!

Oxtail has a nice rich beefy flavor, with a consistency similar to short ribs.
And as a bonus, it makes the best broth.

Yes sir! "ox tails" and beef shanks are the the most flavorful cuts to use for soups and stews.. Very well done!!
