Rounding up my week of Mexican food with Birria Taco's. First made some ABT's with left overs from chicken enchilada's. Than on to the taco's. These where really good and loving these low Carb corn tortilla's. The beans are my first try with black soybeans. Ended up restarting pressure cooker couple times but they got there. Thanks Jeff for help. On a side note just had a CT Coronary Artery Calcium Heart Scan done. The LAD score is 283 and total was 419. I expect I will be hearing from Doctor soon. I see some diet changes in my future.

I was arguing with Doc about cholesterol. I had a total of 178 which I was good with. He said need to be lower. There is a lot of info now saying cholesterol is not that bad. He told be get this scan done than we talk. Looks like I am going to loss this argument.
 
They look good! My doc always asks me how my smoking has been going and always interested in what I've made lately. Maybe bring him some leftovers!

Some great looking food. I hate that you might have to change the diet up but hopefully you and the doc can figure out how to keep you making awesome looking food for a long time to come.
