Got on Owens site and bought some stuff . Man it came fast . Can't wait to use it . Here's what I bought :
Ground form bacon
Red Barn Bologna
Summer sausage
Original snack stick .
I know some of you use these , and am interested in thoughts on the bologna and the formed bacon . @pcfarmer , @nepas
 
Ground bacon and red barn are great. I have ss seasoning too that's good. I will have to look and see what it is for sure. Owens has great seasoning and customer service if you have questions on them.

I have some hi barrier casings coming for the bologna . I was going to try them in a sous vide bath , but now I'm wondering if I should change casings and use the smoker .
 
Dont have a SV, cant help ya there. I use smoker for everything.
 
I have an SV, but smoked bologna is to die for!!
I use those big red bologna casings.

Yeah Al I like that . I bought some that are 3 1/8 " but they are black . Made for steaming or simmer . Gonna try both ways , with a pork and beef mix .
