I attempted my first pulled pork a few months ago when I was just a couple weeks into my journey into smoking meat. It turned out horrible because I was impatient and pulled it way before it was ready.

I decided to give it another go yesterday. I bought some butts on sale a while back at $.99/lb. I was very pleased with how this attempt went. I put the butt on around 4PM. Cooked around 250-275. I did not wrap it at all. I think it stalled around 174° but it was brief. I did hit it with apple cider vinegar about every hour starting at hour 4 until hour 9. I pulled at 200° IT, which was around 4 AM. I lost an hour with DST but it was on the smoker for 11 hours. I put a towel in the bottom of a cooler, wrapped in foil, and put another towel on top and caught a few Z's. I woke up at 8 (the latest I can ever sleep, no matter how little sleep I got) and started pulling it apart. Was still very hot, so had to use forks. It pulled very easily and was very, very moist. I am horrible with remembering to take pictures. I'm working on that though. I got a few though. Made some nachos with it. Turned out great!
