My first over-night brisket smoke. Not my first brisket. I would have to say doing it overnight is better. The outside temp is more consistant and the breezes tend to stay at minimum. Really makes it alot easier to maintain a constant Grill temp. Any way, here is the Q-view, I hope you like it.


I did this after smoking a Pizza Fatty and some ABT's. Darn near a full 24 hours of smoking.

If you noticed in the "Supplies" pic. I had a 30 pack of Bud Light. When I finished the smoke....lets just say, I switched to coffee at about 5 AM because...
