Thanks Bill . Yup , he does great with this type of thing . I was wondering about the lime juice , but it added to it without really tasting the lime . I guess it's for some acid .

WOW!! Absolute perfection right there. I've never done a roast like that in the oven but this makes me think it'd be worthwhile. That is one stunning, beautifully cooked chunk of meat right there. Nice job.
