anything major wrong with pulling chuckie at 190°--Refrigerate --Waiting unti next day to cut up into cubes and finishing to get burnt ends???
 
Nope that will work fine, vac seal them if you can to keep as much moisture in
 
Yup that will work fine although you will have to bring everything back up to temperature.
