It is a nice snowy morning in Norfolk, Virginia. My name is Ryan and I a beginner at smoking, but I am a long time meat eater. I am a proud new owner of a MES 40". I have successfully smoked a pork loin and unsuccessfully smoked a rack of spare ribs. Looking forward to spare ribs round 2 this weekend.
