OPINIONS NEEDED!!! Enclosing smoke house

Hey everyone, I am almost done framing my smokehouse. My father in-law has left over oak flooring, the top side of this flooring is finished but the bottom of the board is raw (which would be on the inside). I know that generally the flooring is finished with polyurethane which is my concern because as the wood heats up from the smoke would this cause the the chemicals to bleed and put off of unwanted gases in the inside? Should I stay away or should it be okay? Any advice is greatly appreciated, thank you.
 
I would sand it off, do you have a belt sander? The varnish is going to fall apart in the weather and let moisture in the wood. If you can get it off and then you can seal with desk stain.

I also like to install board length wise from the top down just like a barn. Water runs out better. This requires blocking installed between the studs

I saw your other thread and mine has old reclaimed pine on the outside.

I don’t have a belt sander, rather than going through that process I found a guy that has cedar beveled siding for $3 dollars a board that I may take him up on.
