is a success. I Was going to take it to the 203 range but decided to slice it and pulled it out at 199. It sliced great but still was borderline pull-able and was cut with a fork tender.

Seasoned with Barnyard pimp and the rub was off the charts good. Heck I even put it on my corn/potatoes and cottage cheese. It was cooked with a mix of Maple/Hickory and cherry pellets

Chuck can be very difficult to get right but that beefy flavor is so worth it. Looks fantastic. Nice work!

Looks really good! What was your time and temp? I’ve been looking forward to trying a chuck roast.

Usually i will cook it for pulling and in the 203 range but today we decided that we were hungry and did not want to wait and were going to slice so i pulled it at 199. Which is higher than i would let it go for slicking but it was still super juicy/tender and was in the cooker 13 hours.

My cooks seem to go longer than many folks cooks but i usually dont stress it and just relax.
