Opening Weekend :: Grilled Quail & Bacon Wrapped Venison Filets

I was invited to opening weekend at a friend’s ranch in the Texas Hill Country (different THC than those of you from California and Colorado). Here are a couple of pics from Friday night dinner. The quail was semi-boneless and the whitetail backstrap came from last year’s hunts on the same ranch.

We took five does that weekend and better than that - my daughter got her first deer. She was a crack shot and before you ask, yes, she field dressed and quartered it (with some instruction).

A bit of brown water around the fire with good friends, does it get better?

Never had quail. I expect a gamey version of a cornish game hen.

My son almost puked field dressing his first deer.
Go figure, now he's an EMT and Army NG combat medic.

Man it been a long time since I had quial. That venison is to die for. I been putting a bug in a couple of friends ear for some. Looks like a great time!

Quail is not gamey; it's light like chicken breast. Think of it as a much smaller game hen - deboned.

Those quail did not come off the land; they came from Texas Quail Farms and shipped frozen. However, we have hunted quail locally at the Schmidt Double T Ranch between Mason and Brady. There are quail on my friend's ranch, but not a lot, so they're not hunted and referred to as the camp covey. It's great to hear them with the sunrise.
