Well I was so excite about fianally getting a chance to smoke some thing, that I forgot to slather them with mustard. I forgot it once before and they turned out ok. Gota love Jeff's rub!!!. 3 racks trimmed spare ribs, 1 butt, 1 picnic, and of course Dutch's famous beans. Q-Views as soon as I wake up and start the smoker.

I am sure they will turn out fine as you said you have done this before and they did.

Remember the only real purpose of using mustard is to help the rub adhere to the meat. It really does very little to adding flavor. I've used EVOO also.
