Hi guys and gals,

One of my good friends gave me a 21 lb, pork picnic, as a gift, to smoke.

I'm new to smoking ( I've only smoked some salmon a few times in my MES)

Is this an impossible task to smoke this large of a picnic.

Is this gonna take 48 hours to cook?

Help, please, with any suggestions.

It just keeps staring at me every time I open the freezer and sooner or later my buddy's gonna ask how it came out ( and ask to try some of it)

Another option along the lines of what @MartyJ said is maybe 1 to 1 1/2" cubes and doing pork shoulder burnt ends. Yummy and they seal up and freeze nicely. I'm actually eating some as I type
