The wifey wanted to have an Olympic Opening Ceremony Party (low key)
I said sure, But I'll do all the cooking.
When I told her my line up I thought she would shoot me down, shes not much into the whole smoked food scene!  

Anyhow she let me do my thing.
We prepped most of the food the night before.

Laura had picked up a cheesecake
Our guests brought, desert, fresh fruit with whipped cream and hoagies with all the fixings, there was plenty of Beer , wine and Wine coolers.

Needless to say no one went hungry or thirsty.


Buffalo Chicken Lollipops.

Decided to make these again for my Olympic Opening Ceremony Party.

Chicken was marinated in a vacuum sealed container for 24 hours using Franks Red Hot, brown sugar, garlic powder, and onion powder. Served with celery and Blue cheese dressing.

These were slightly overdone, cook time should have been around 60-90 minutes, these were in for 120 minutes. however, they were good as usual.
 








Panini Fattie
Turkey, bacon, hard salami, smoked provolone and American cheese.

 










Another one same ingredients as above but cooked bacon inside and wrapped in dough, this was not smoked It was baked in the oven at 325° for 35 minutes or so.

I tried making pinwheels but it came out more like a stromboli. I decided to wrap it instead of roll it, I was afraid the dough would not cook properly on the inside if rolled up.





This was pretty good, we went light on the filling and it was just enough.


And of course we had to make the Texas Tommies
 



Can't forget the Luau Pork Shots.


These were such a hit last time I decided to make them for our Olympic Opening Ceremony party.
The whole family helped out, this was great because I got to take some pics and not worry about washing my hands every 10 seconds.
I did not get to top with toasted coconut, maybe next time.













Garlic Bomb
Garlic and Jalapeno wrapped in Parmesan chicken.


I finally got around to making my garlic bombs, this recipe is slightly different than my original recipe in SQWIBS test kitchen, but I will add the original recipe once I test it out.
This calls for Parmesan and the other recipe calls for Teriyaki.
 
  • Cut the chicken in strips
  • Halve and clean the jalapenos
  • halve medium sized garlic clove
  • place chicken in a dish and add dressing followed by Parmesan
  • place the halved garlic inside the halved jalapeno and place at the bottom of the chicken, roll and secure with a toothpick,
  • smoke at 250° for 60-90 minutes, be careful not to overcook.
  • halve to serve cutting through jalapeno and garlic
     










You know what’s really sad about this whole post.

No skin and used tenderloins I prefer the breast over the tenderloin but would also wager that thigh meat would even be better. I just needed these to be quick and easy.

I wanted to do a batch with fried skin and wrap the pops with the skin the last 20 minutes or so during the smoke, but ran out of time.
